自家製麺で提供している東京・東小金井にある『自家製麺 くじら食堂』に伺いました。
店主は『麺や 七彩』で修行された方で、麺が主役のラーメンを提供するお店です。
醤油、塩、生姜醤油、煮干しのラーメンに、油そば、つけ麺とメニューの種類が多く、平日の夜に伺いましたが、サラリーマンや若いカップル、地元の学校に通う学生グループなど男女関係なく多くのお客様に愛される一杯を提供するお店でした。
尚、9月から新店舗に移転予定とのことです。
頂いた一杯は『塩（250g） 750円』
トッピングは、2種類のチャーシュー、ネギ、メンマに柚子の皮が入っていました。
透明感のあるスープは鶏ガラと魚介がベース。
鶏の旨味と魚介の風味を感じながら頂く事ができる、あっさりながら深みがある。
自家製麺は手揉み中太ストレート。
麺は、150g、200g、250gから選ぶ事ができます。
小麦の風味をしっかり漂う、ツルツルとした喉越しとモチモチ食感が秀逸で食べ応えがある。
チャーシューは提供前にバーナーで炙られた豚バラと低温調理でしっとり仕上げられた豚ロース。
