Food Proud Motsu-nabe (Offal hotpot)
The specialty "Motsunabe" uses a special soup made by slowly simmering chicken and pork bones. The soy sauce used is from Jokyu, a soy sauce maker in Hakata, Fukuoka Prefecture, which was founded in 1855. It is characterized by a mellow, deep flavor and rich aroma created by history, as well as the sweetness unique to Kyushu soy sauce. The miso has a sweet and gentle taste, but is a unique blend of several types of miso, mainly rice miso with a deep flavor.
