8月3連休初日の夕食に3名で訪問です。
場所は東武線曳舟駅から徒歩1分です。
事前に「ディナー シェフおまかせ TERRA - テッラ」5,500円に「ワインペアリング4杯」4,000円を付けて予約しました。
これって食事もワインも全部お任せって事ですね。
結果から言うとこれは大正解で、全ての料理が美味しいです。更に配膳の際にはシェフが全ての食材とその産地仕入れ先や調理について､とても丁寧に説明してくれます。基本はオーガニックで地産地消のようです。
ペアリングのワインはホールご担当の方(多分ソムリエ)が産地や風味を説明してくれます。自分ではワインを選ぶのは難しいですよね。専門の方が選ぶペアリングワインは料理と良く合っていて、料理もワインも相乗効果で素晴らしく美味しかったです。
最初にサラダ
10種類のオーガニックサラダに自家製のキャロットドレッシング。
新鮮なオーガニック野菜､苦味が有る野菜が何だか分からなかったですが、それが良いアクセントになって美味しいですね。白いとうもろこしが甘くて良かったです。野菜の美味しさを､上手くまとめた自家製のキャロットドレッシングが素晴らしく美味しかったです。
ペアリングのワインはオーストリアの白ワイン。フルーティで辛口。甘くないのがサラダに良く合っていて素晴らしいペアリングです。
前菜は、鮑､サザエ､ハマグリ､シラス､プロシュート､イチジクにバルサミコ酢とオリーブにチーズ､あんバターなどなどと､焼きたてのパン。
鮑はバジルソースで磯臭みが全くなく、柔らかくて美味しいですね。
サザエも肝を含めて磯臭さが全くなく良い食感で美味しいですね。
ハマグリも貝のコクが有りプリプリで柔らかくて食べやすく美味しかったです。
ペアリングのワインはハンガリーの白ワイン。これも辛口で美味しいです。
パスタは白エビのビスクソース
高級な雲丹のパスタに1,000円アップで変更可能と言う事でしたが､雲丹より白エビの方が好きなので、そのまま白エビのパスタをお願いしました。
白海老とかの甲殻類の旨みがギュッと詰まった濃厚なビスクソースは最高に美味しいですね。
パスタも自家製麺で歯応え良く美味しいパスタです。
ペアリングのワインはオーストリアのロゼも辛口です。海産物の白海老パスタビスクソースに良く合いパスタの味をより盛り上げてくれます。
最後にローストポークに白トリュフのソース
低温調理のローストポーク。柔らかくて豚肉の旨みが良く出ていて、更に白トリュフのソースとの組み合わせがとても美味しいです。
ペアリングのワインはドイツの赤ワイン。ドイツのワインは甘いって思っていましたが、これも辛口でスッキリしていてローストポークに良く合います。
食後にコーヒー(別料金500円)を勧められ､いただきました。
ディナーはテーブルチャージは300円です。
1人約11,000円で、この付近にしてはちょっとお高めな値段ですが、内容的には大満足です。むしろ近くにこのようなレストランがあるのは便利です。
シェフとホールの店員さんのホスピタリティもとても良かったです。
