最近、熟成肉というものが流行っていますが、
こちらはその先駆けでもあり、「ホンモノ」の熟成肉がいただけるお店。
人気店ですが、平日の遅い時間（２１時以降）とかなら、予約なしでも大丈夫そう。
場所は、西日暮里の駅近く、大通り沿いのビルの地下１階。
千代田線の３番出口からならすぐです。
白木を基調としながらも赤をアクセントにした明るい雰囲気の店内。
以外と広々としていて、カウンターもあります。
焼肉は炭火焼きがいいなと思っていますが、こちらは鉄板タイプの卓上ガスコンロ。
若い店員も多く、フレッシュなお店ですね。
よくいえばフレンドリー、悪くいえばチャラい。
説明過剰な点もありますので、そういうサービスが苦手な人には向いてないかも。
さて、お料理。
■最高級熟成和牛５種盛り合わせ（3280円）
「旨熟成“極”」に分類される脂多めの霜降り部位のみからセレクトした、非常に重厚で贅沢な盛り合わせ。
今回は、「クラシタ芯」「サーロイン」「特選ヒレ」「本みすじ」「マキ」の５種。
味付けは、塩とタレが選べて、各部位2切れずつになります。
ちなみに、「エイジングおすすめ希少部位5種盛り合わせ」の方は、赤身部位が中心な「上物希少部位」からの盛り合わせだそうです。
■上タン塩（1080円）
厚切り、とても柔らかい。
■石焼ビビンバ（780円）
カリカリおこげのシンプルな石焼ビビンバ。
辛さは弱めでした。
■ソルロンタンスープ（680円）
白濁した色からとても濃厚かと思いきや、案外あっさりしたスープ。
全般的に、美味しかったです。
熟成肉の特徴は、引き出した旨みとねっとりとした柔らかさにあるかと思いますが、
レアからミディアムレアでいただくのが、その柔らかさを堪能できてオススメのようです。
