私、個人的には、ホテルのダイニングって、あまり評価高くない。
宿泊客が、外に出るのが面倒だから、利用するためのダイニングだから、
はずしはないように、オーソドックスで、万人向けというイメージです。
今回、リッツに宿泊する都合があり、
まあ、45階から降りていくのも面倒だから、という感じでお邪魔しました。
リッツのダイニングですから、空気感、景色は、最高です。
口開けのシャンパンは、重いもの、軽いもの、プレステージから、選ばせてくれる。
グラスのシャンパンが3種類から選べるところから、ここは、もしかしたら、只者じゃないかも？
アミューズから、カラスミ、鰻、貝類等々が、フレンチの技法で出てきて、
どれも、素晴らしい組み合わせで、驚愕でした。
パンが出てきたのですが、これがまた美味しい。
たかが、パン、されどパン。
しっとりして、もちもちして、香りが高くて、口溶けがよくて。
ペアリングで、ワインを頼んだのですが、聞いたこともない品種のスパイシーな白が出されて、
これがまた、ハーブ系の海産物に合うんだ、これが。
完全お任せ1コースのみなのですが、この日のメインは、牛。
繊維の細かさ、味わい、ソース、火入れ、完璧！
また、それに合わせて、赤を出してくれたのですが、
牛と言ったら、ボルドーのカベルネだろ、と思っていたのですが、
出てきたのは、ボルドーのメルロ。
合わせてみると、これが良いんだ。
癖が強くない繊細な牛なら、メルロの方が良いんだ。
うーん、宗旨替えしないといけないか、、、、
料理、景色、ワイン、サービス、全てが完璧です。
人生、生きていれば良い事もあるとあると浸れる、記憶に残る素晴らしい時間でした。
恐れ入りました。
ただ、会計だけは、それなりでしたが。
