ChefThe challenge of the owner-chef who respects Japanese and Mexican culture
Owner and chef Marco Garcia is from Mexico and was impressed by Japanese food culture and the delicate taste of dishes. We use traditional Mexican cooking methods to serve food as quickly and freshly as possible. We aim to create a unique style by sublimating tacos, mainly fish, to the `` selection'' style of Japanese Cuisine. Our style is the one that Marco Garcia has long dreamed of achieving. Please enjoy the chef's delicious dishes.
Food selection the possibilities of tacos, tacos made with only fish
Basically, the contents of the selection will change depending on the fish available that day. Fish are a product of nature, resulting from a miraculous combination of conditions. It could be the weather, changes in the fish's environment, or the fisherman's luck. In addition, the fish we receive from Shizuoka's leading fresh fish store, Sasue Maeda Uoten, is of the highest quality, with careful attention to everything from how to wrap it on board, to storage, to transportation. We will finish it into tacos using the cooking method.

In order to enhance the perfection of each taco, we serve it in a style called salsa pairing, where we pair each taco with the best salsa. By creating a salsa from scratch that goes well with the type of fish and how it's cooked, you can create tacos that feel more unified.
