Chef吉沢範彦氏（ヨシザワノリヒコ）―伝統を体現する、期待の四代目
1976年、京都出身。銀座「きよ田」で15年以上研鑽を積む。木村氏から魚の目利き、握り方まで細かく教えられ、独特の鮨哲学は彼に引き継がれようとしている。継承した伝統を大切にしながらも、枠に囚われすぎず独自の握りを披露する、四代目の名に恥じない実力の持ち主だ。

暖簾をくぐった先には、青い絨毯が敷かれた静謐な空間が広がっている。心地よい緊張感が張り詰め、カウンターに活けられた季節の花が空間に彩りを加えている。全8席のカウンターは中々予約が取れないプラチナシートだ。左手には白洲正子氏や岡部嶺男氏から頂いたという貴重な器が飾られている。一品料理に使用している皿も、200年前京都で作られたものだという。料理だけではなく、細部に感じるこだわりにも目を向けたい。
心で作り上げる握りに、客人は詠嘆の声を上げる。全国の美食家が一度は来店したいと願う鮨屋
開店から半世紀の歴史を有する「きよ田」。鮨を愛する者ならば、一度は訪れたいと願う名店だ。静謐な空間で供されるのは、語り継がれてきた珠玉の握り。メニューは用意されておらず、その日最高の状態で仕入れたネタで構成された”おまかせ”のみ。数あるネタの中でも、鮪には並々ならぬ情熱を注いでおり、信頼する仲卸から仕入れた最高級品の芯だけを握るという。「鮪のきよ田」の呼び声高いその味は、記憶に刻み付けたいほどだ。
