寒い中やってきたのが、『カメキチ』。当日の電話で席が取れましたが、行ってみると見事に満席。世代的にも自分たちと同じか、少し上くらいの客層で、落ち着く感じです。
・前菜盛り合わせ
パテ・ド・カンパーニュ、フォアグラとイチヂクのテリーヌ、リエットサンド、地鶏モモ肉・豚タンのゼリー寄せ、ソースラヴィゴット。
一番印象に残ったのおはフォアグラ。イチヂクとのバランスがいいのかな。両方の甘味が、上手く溶け合っていました。
・トリッパのグラタン
ウチの相方チョイス。トリッパ大好きなんですよねぇ。僕的にはもう少し刺激があってもいい味だと思いますが、しっかりした味わいで、パン粉の食感も。何より量が多いのはビストロらしくて良いですね。
・タスマニア産仔羊背肉のロースト ローズマリー風味
付け合せにキノコ、インカのめざめ、ちりめんキャベツを添えて。ビストロらしいボリュームとビジュアル。羊らしい香りの漂う、サーブされる瞬間。食べ応えのある肉。ソースも羊のジュを使っていて、羊らしさ満点の一皿です。羊は自宅でもたまに焼くのですが、やっぱりソースの作り方を覚えないとなぁ…なんて思います。
ちなみに、すごくどうでもいいことかもなのですが…。ここのシェフは確か、僕と同い年なのですが、まったく老けてないどころか、若返っているような気がする（笑）
