A French Restaurant in Old Karuizawa Captivated by the Harmony of Ingredients
Nestled in the lush greenery of KYUKARUIZAWA KIKYO, Curio Collection by Hilton, you'll find the French restaurant SONORITE. Here, you can enjoy a beautifully crafted course meal that flows seamlessly from prologue to epilogue. True to its name, which means "resonance" in French, the skilled chef masterfully harmonizes the ingredients, creating exquisite dishes that are a true delight. |
Located in the heart of Kyu-Karuizawa, "Kyukaruizawa Kikyo, Curio Collection by Hilton" features its main dining restaurant, "Sonorite."
This small luxury hotel has about 50 rooms, yet the dining area is surprisingly spacious. The space at the back of the lobby floor seamlessly connects a casual lounge and dining area.
We started with an amuse-bouche of bean tart and crispy carrot sandwich. The beans had a surprisingly strong bean flavor, providing a crunchy and delightful texture. The carrots were also rich in flavor, showcasing the beauty of local ingredients.
Next was the "Sato-san's Prosciutto" from Takayama Village, Nagano Prefecture. Served in thick slices, it was quite satisfying. It's heartwarming to hear that the motivation for Sato-san, a grape farmer, to start making prosciutto was simply to enjoy delicious prosciutto every day.
We also enjoyed a vegetable gariguette, artfully presented with a variety of seasonal local vegetables. Each vegetable had a distinct flavor, making it incredibly delicious.
The Tenryu sweetfish served with romesco sauce was beautifully plated and well-prepared, making it a delightful dish during a season when sweetfish tends to become repetitive in dining out. Honestly, I don’t need any more salt-grilled sweetfish after this.
The homemade brioche was luxurious, decadently rich with butter.
Then came the Shinano Yukimasu and clams. It's fascinating to see such white fish among the masu varieties. There are so many ingredients I still don’t know about. The clam's punchy umami provided a perfect accent.
For the main dish, we had the Mine-mura beef, a prized brand from Nagano. Simple charcoal grilling brought out its true flavor—rich, not overly fatty, and showcasing the high-quality beef’s umami.
To finish, there was the Meloso, a Spanish-style rice dish, featuring a generous amount of local mushrooms and brand chicken "Sanada Maru," making it hearty and fulfilling.
The dessert was a cassis mousse and its sauce. The rich aroma and flavor of the cassis were knockout. If someone only knows cassis from a sweet cocktail, they will be astonished at this flavor.
The second dessert was a rhubarb and rose crepe. Just like the dessert at "Yasaka," the effort to serve freshly made dishes until the very end is heartwarming. The rose aroma was chic and distinctly different from the crepes you'd find on Takeshita Street.
The complimentary tea sweets were thoughtfully prepared, which was a nice touch. We finished off with herb tea, and it was a great meal.
This entire course, including tax and service charge, costs JPY 21,753. Given the exquisite dining experience at a top-class hotel in a popular tourist area, the pricing is very reasonable. The quality is far superior to many overpriced urban French restaurants. Plus, after finishing the meal, you can dive straight into the large public bath and then into bed. Families are welcome as well (with elegance in mind), making it a wonderful option for an exquisite summer vacation with your loved ones.
