On the second day of our Karuizawa trip, we had breakfast at the hotel, then picked up bread for the next morning at the renowned bakery "France Bakery" located on Old Karuizawa Ginza. After that, we rented bicycles and explored several famous spots around Karuizawa.
For lunch, we decided to visit this Japanese restaurant situated roughly between Karuizawa and Nakakaruizawa. While Karuizawa is known as a highland resort with a variety of eateries, it gives the impression that there are relatively more Western-style restaurants. In contrast, traditional soba shops typical of Nagano Prefecture can be found scattered around, but there aren't many pure local cuisine or Japanese restaurants. In that sense, this establishment is a valuable presence.
The owner-chef, Morihisa Fujisaki, hails from Kochi Prefecture, where his family ran a sushi restaurant. It was this background that made him decide to pursue a career as a Japanese chef after graduating high school. However, he felt the need to seek a new world of Japanese cuisine that would change its traditional image and made the bold decision to move to New York City alone.
In New York, he honed his skills at a famous restaurant while immersing himself in his hobby of playing jazz bass. Upon returning to Japan, he continued his studies in cooking and music in Shimokitazawa, Tokyo. He later moved to China, where he established and ran various restaurants for about 20 years in cities like Dalian, Beijing, and Tianjin. In 2016, he opened Mori Q in Karuizawa with a concept focusing on "organic seasonings, fresh vegetables, meat, and fish from trusted producers, all emphasizing delicious and body-friendly natural Japanese cuisine."
In addition to running the restaurant, Mori Q also offers home party catering services. The name Mori Q is clearly derived from the chef's name,
