At this time of year, it takes about 15 minutes one way. Be aware that it will take more than 30 minutes in summer and high season. By car: Turn at the "Nakakaruizawa" intersection on National Route 17 and enter National Route 146. After passing the Hoshino area, you will see the entrance to Shiotsubo Onsen Hotel on your right. I found this place on YouTube thanks to a certain Jimon Terikado, and after searching, I discovered that they offer online shopping on Tabelog Mall.
The restaurant only accepts one reservation per day, making it quite difficult to book, which any avid food blogger would understand—it really boosts the score.
I was so eager to try it out that I made an immediate purchase.
They have four types of pasta, and I ordered one of them.
★Pork belly and fried eggplant ragù with mozzarella cheese, flavored with oregano and walnuts (bigoli) (JPY 1980, tax included)
From the YouTube video, I learned that this chef layers various ingredients in their cooking, and this pasta felt like it included many familiar ingredients.
Preparation was simple; you just boil and heat it up. However, the plating didn’t go well because the cheese made it sticky, while the sauce was quite runny.
*I was briefly confused because the recipe included a different pasta's instructions. Should I add oil? Or not? I was so frustrated.
Did they say to add Karasumi (cod roe)? It wasn’t included, so I had to dig through the trash!
The recommended boiling time was completely off as well.

So, the pasta is really thick, similar to the texture of dried noodles used in Nagoya-style simmered udon (I hope my feelings are reaching you!!!).
The sauce has various components, but the balance is fantastic.
With so many ingredients, you’d expect something to feel off, but it’s incredibly delicious.
Oh, but there might have been too little pork—only about two pieces were included.
Well, at nearly JPY 2000, plus the cost of refrigerated delivery, the total ends up being over JPY 3000. However, I think this pasta expands the range of culinary options you can experience.
I definitely recommend giving it a try!
