I had some delicious blue cheese at Hiramatsu Karuizawa, and I ended up purchasing some to take home after checking out.
Blue cheese can be quite polarizing due to its strong flavor, and while I don't particularly love it, I find it to be just okay.
However, the blue cheese here has a milder pungency with a delicious concentration of umami. It pairs wonderfully with wine.
So, while those who prefer stronger blue cheese might not enjoy it as much, I personally found it to be very enjoyable when paired with wine.
