At the Chinese restaurant "Tori" inside the Karuizawa Prince Hotel West, I opted for a course meal to better understand the normal dishes, even though there are à la carte options available.
The course meal is priced at JPY 6000, 8000, 11000, or 18000, and since I wanted to finish with fried rice, I chose the lowest priced option. If it's not enough, I could always order extra from the à la carte menu. A separate service fee of 10% applies.
Due to driving, I chose a non-alcoholic beer for my drink.
The "Shunsai Fu Course (JPY 6000 + service fee 10%)" started with a "Spring Delicacy - Assorted Appetizers".

The flavor was quite delicate, not too strong on the oyster sauce, which left me wishing for a bit more impact. The XO sauce definitely overpowered in flavor.
"Stir-fried Scallops and Eggs, with Crab in Thick Sauce"... A well-balanced taste; it was quite good.
"Clam and Aonori Fried Rice"... The base was egg fried rice with a moderate amount of clams. The flavor of the aonori was surprisingly subtle, but the crunchiness of the leeks was pleasant. The taste was somewhat mild. Given that I usually prefer stronger flavors, perhaps it was adjusted for older diners, so I found it a bit lacking.
I felt somewhat bad for the hotel chef, but towards the end, I mixed a bit of vinegar and mustard into the fried rice, as this had been my go-to way of enjoying it at a Chinese restaurant I often visited during my salaryman days...
Finally, there was "Mango Dessert with Fruit and Tapioca"... Inside the mango cream were strawberries, kiwis, dragon fruit, blueberries, and pink grapefruit, offering a decent sweetness and was quite tasty. This dessert might have been the most flavorful of all that I had eaten until then.
Overall, the meal leaned towards Shanghai cuisine, so it was light yet refined. There were no overpowering flavors, just gentle seasonings, which would surely delight those who appreciate this style. I do enjoy spicier dishes, and though I considered ordering a more intense one from the à la carte menu, I actually ended up feeling quite full from this course alone, so I decided to stop here. It was a great meal!
