I arrived at Sasakura a little before opening at 10:50 on Saturday. They were just putting out the noren (curtain) as everything was ready. There were four groups ahead of me. The ordering style is through a ticket machine.
This restaurant was selected as one of Tabelog's Top 100 Soba Restaurants in the EAST in 2025.
I ordered the soba served with spicy Japanese radish and Shinshu miso.
The tea had a rather bland flavor.
Since the spicy radish doesn’t come with dipping sauce, it was quite mild in taste.
I feel that adding a bit of dipping sauce would enhance the flavor. The Shinshu miso felt a bit lacking in taste.
The soba looked very beautiful.
However, the flavor of the soba itself was somewhat subdued.
Perhaps due to insufficient draining, the taste was on the lighter side.
I have been exporting buckwheat flour from Hokkaido for 15 years.
Even before I got involved in this business, I enjoyed eating soba extensively.
Personally, I prefer soba with a strong flavor, especially rustic soba made from 100% ground buckwheat.
This is a favorite place that I want to introduce to my friends, so I give it ⭐️4 or higher.
