【2006年11月宮崎市恒久1963より移転】 |
日本100名城の飫肥城を訪問した際に立ち寄りました。飫肥城からは少し離れた住宅街、店舗軒住宅ですかね、綺麗な店内。
訪問した2022年年末、北部九州は寒波で大騒ぎでしたが日南市は12月とは思えない暖かな日でした。
土曜日13時頃、待1組、後2組。おそらく家族経営だろう、4人体制、厨房は2名。

厨房には屈強な体格の男性と女性、私が訪問した際の調理は女性が担当、チャーシューなどの盛り付けを男性が担当。
カウンターから厨房の様子がよく見える、醤油タレと一緒にいれた白い調味料はなんだろう？、計量スプーンでしっかりとバランスを見てます、茹であげも丁寧。
細もやしは漬物用の黄色い大きなバケツで水に晒してあり、盛り付け前に麺茹でと同じ釜鍋で一気に湯掻く、細もやしのボリュームに驚く、並ラーメンなのに大量に盛られている、その上からチャーシューが5枚の豪快な盛り付け。中細麺。
前日夜に食べた宮崎市内の栄養軒と比較するとやや塩が強い豚骨。意外と言っては失礼だがスープと細もやしの相性が抜群、神奈川県民の私が想像した一般的なもやしと九州の細もやしは味が違う。
チャーシューは冷えていたがスープで温めると良い感じ、柔らかくウマい。
日南市飫肥城下町の住宅街に地元民に愛される名店がありました。
計量スプーンの白い粉の調味料が何なのか最後まで気になりました。
