The kué (longtooth grouper) served first as a greeting nigiri was rich with fat and insanely delicious. I have not had kué as nigiri that often, but this was the best I have ever had. The next Sea Bream also had strong umami and tasted really good. It paired perfectly with the shari (sushi rice) served at about body temperature. The kohada (gizzard shad) had just the right amount of fat and the perfect curing, and the saba (mackerel), with its rich umami and fat, was also delicious.

A tasting comparison of Hachinohe no maguro (tuna from Hachinohe) and Oma no maguro (tuna from Oma), brand-name tuna that Japan is proud of. The sweet richness of the fat, the tang of the lean meat, the lingering aroma... everything is perfect. As for the kohada (gizzard shad), it is not over-cured, so the flesh is plump and tender. The sawara (Spanish mackerel) in winter is packed with fat, and its rich flesh melts on your tongue.

Starting with the Appetizers, you can tell each dish is prepared with great care, and the seasoning brings out the natural flavor of the ingredients, which really builds your expectations. Every piece of nigiri (hand formed sushi) was excellent, and I especially liked nodoguro (blackthroat seaperch), two kinds of tuna, and anago (saltwater eel). No alcohol today so I can fully enjoy the sushi! I’m the type to save my favorites for last, but I liked everything so much that I had a hard time deciding. I started with the rolls, and the ika (squid) was sweet, the anago (conger eel) was tender, and the sashimi was firm with a nice crunchy texture and tasted great. Honestly... it was all just so good!!!

They first served chawanmushi (savory egg custard). It came piping hot, which was nice. Then came the sushi. The shari rice was small and gently formed, so it seemed to fall apart nicely in the mouth. The hosomaki (thin rolls) also had a rich nori flavor and tasted great. I finished it in no time.

I visited for the first time, drawn by the organic vegetables and natural wild caught fish. The chef used to work at a famous sushi restaurant. We visited as a party of two, and when we ordered one dish, they kindly split it into two plates, which was a nice touch. I think it was the truffle Clay Pot rice? It was very good. We finished with 3 pieces of sushi. It was nice to have such a wide range of menu items.

This time, I got the Premium sushi set and took home their specialty tako-inari (octopus inari sushi) as a souvenir. The sushi served on a large platter had exceptionally fresh toppings, and I really enjoyed it. Sushi served one piece at a time is nice too, but this style, where your favorites are plated together and you can eat them in any order you like, is nice as well. It is one of the places I would like to visit again soon.
