All varieties of tuna are sourced from Yamayuki, a renowned tuna wholesaler trusted by top sushi restaurants.
The akami (lean tuna) is thick-cut, while the chutoro (medium-fatty tuna) is rich and full-bodied, showcasing the exceptional quality of the fish. Many repeat customers order several pieces of tuna alone.

Every piece is crafted with carefully selected, top-quality ingredients—absolutely delicious! The tuna comes from Yamayuki, ensuring consistently outstanding flavor. The generous size of each topping is impressive, and the vinegared rice made with red vinegar is perfectly balanced. This is truly a must-visit sushi destination!

The sushi rice is slightly smaller in size, with a delicate texture that separates easily. Each topping is perfectly proportioned to the rice. Not only are the fundamentals—such as the balance of the nigiri and the seasoning of the vinegar—well executed, but the quality of the ingredients and the craftsmanship are also outstanding.

Located just a 3-minute walk from Mitsukoshimae Station on the Tokyo Metro, Ja no Ichi is a historic sushi restaurant established in 1889. The renowned writer Naoya Shiga is said to have given the restaurant its name.
Recently renovated, the restaurant offers a bright and refined atmosphere. Ja no Ichi is celebrated for preserving the classic Edomae-style sushi techniques that have defined Tokyo's finest sushi establishments.
Photograph:東京ふらふら
Ja no Ichi offers a seasonal omakase course featuring the freshest ingredients sourced from Toyosu Market. The sushi rice is made with "Emi no Kizuna," a premium variety grown in Noto, Ishikawa Prefecture, and carefully cooked in a traditional iron pot for a fluffy finish—one of the secrets behind their exceptional flavor.
Instead of using sugar, the rice is seasoned only with vinegar and salt, resulting in a perfectly balanced taste and a delicately smooth, loose texture.
Ja no Ichi is renowned for its Edo-style sushi, especially the simmered anago (conger eel) topped with a rich, house-made sauce. This signature sauce has been carefully preserved and enhanced since the restaurant first opened, resulting in a deep, complex flavor you won't find elsewhere.
The anago itself is incredibly tender, melting in your mouth the moment you take a bite. Its delicate texture pairs perfectly with the savory glaze, making it a must-try specialty.

The "Nihamaguri" (simmered clams) here are said to be exceptional. Each clam is coated in a sweet, rich glaze that enhances its flavor.

There are so many small dishes served before the sushi even arrives, but each portion is modest, making it easy to enjoy them all. Sushi is served at the table as an assorted platter. Applying dashi soy sauce yourself is a unique touch, and the sauce perfectly enhances the flavors of the fresh toppings, making the sushi exceptionally delicious.

Opened as the third branch of the renowned and highly sought-after Sushi Rizaki, this restaurant is just a two-minute walk from JR Ebisu Station.
The interior features dim lighting and a sophisticated, bar-like atmosphere. There are ten seats available at a sleek, straight counter.

The Ebisu branch of Sushi Rizaki offers the same high-quality ingredients as the main location, but at nearly half the price—one of its greatest attractions. The restaurant serves only an omakase course, presented at a perfect, rhythmic pace.
Guests can enjoy the best seasonal flavors, carefully selected and prepared to highlight the freshest ingredients of the day.

Each piece of sushi is expertly aged to perfection, resulting in outstanding flavor. The Aori-ika (bigfin reef squid) and sweet shrimp are served at their prime, with a rich, melt-in-your-mouth texture that reflects the chef’s meticulous craftsmanship.
Attention to detail is evident throughout, such as the layer of nori seaweed placed between the tuna and rice, showcasing the thoughtful touches that set this sushi apart.

While reservations at the main location require a wait of over six months, at the Ebisu branch, I was able to secure a table with just one week’s notice. Although the restaurant is located in an unassuming multi-tenant building, once inside, the refined and elegant interior creates a luxurious atmosphere. The highlight, the omakase course, was truly satisfying—an outstanding meal that paired perfectly with the drinks.

Enjoy authentic Edomae-style sushi at Sushi Kotobuki, where the head chef trained at the renowned Ginza Sushi Ichi. Located in the west exit area of Shinjuku Station, this restaurant offers an intimate counter experience.
Guests can savor the excitement of watching each piece expertly prepared right before their eyes, with thorough explanations about the ingredients. Private rooms are also available for a more exclusive dining experience.

It is said that Sushi Kotobuki sources only the finest tuna each day from a specialty supplier in Toyosu. The tuna is known for its low melting point fat, which allows it to melt effortlessly in your mouth.
The sushi rice is seasoned with a noticeable hint of vinegar and formed into small, delicate portions. Expertly crafted, each piece holds just the right amount of air, allowing the rice to gently fall apart as you eat.

The omakase course offers a well-balanced selection of nigiri and seasonal small plates. It is often chosen for gatherings where guests can enjoy carefully selected sake pairings.
One of their signature dishes features both red and white vinegar sushi rice, fried to perfection. This original creation allows diners to compare the flavors of different vinegars, earning high praise for its innovative approach.
オルカール
At Sushi Kotobuki, the harmony between the vinegared rice and the fresh toppings is exceptional. Among the offerings, the chutoro (medium fatty tuna) and nodoguro (blackthroat seaperch) are particularly memorable. The chutoro is rich and flavorful without being overwhelming, allowing you to savor its delicate taste. The moment it enters your mouth, the melt-in-your-mouth texture and deep umami are truly outstanding.

Sushi Miyakawa is a renowned establishment from Hokkaido that has made its mark in Tokyo. Discreetly located just a two-minute walk from Shinjuku Station’s East Exit, it sits quietly in the heart of the bustling entertainment district.
Inside, guests are welcomed into a tranquil, refined setting that feels worlds away from the city’s lively streets. In addition to counter seating where you can watch the chef at work, private rooms are also available for a more intimate experience.

It is said that the chef personally visits the market to select the finest seafood for the sushi. The restaurant is dedicated to the traditional Edomae style, with a particular focus on using red vinegar rice.
The red vinegar is crafted using time-honored methods, resulting in a mellow flavor that highlights the rich umami of sake lees.

The "Omakase Nigiri Course" features a selection of seasonal dishes and eight pieces of nigiri, presented in a style reminiscent of traditional kaiseki cuisine.
Pictured here is a six-item appetizer platter from one day. Each dish is thoughtfully prepared using seasonal ingredients and the freshest fish, allowing guests to enjoy a variety of creative flavors.
さりこんぐ
Every piece of nigiri here is outstanding, as expected. It's also unusual to start with grouper, which was a pleasant surprise. The meal begins with a light, delicate sushi, and when the marinated mackerel arrives, the flavor is simply exceptional. Moving on to the premium bluefin tuna and then the kuruma prawn, each bite was pure bliss. The balance between the rice and the topping is truly perfect.

ななちゃんグルメ
The balance between the rice and the topping is perfectly executed, with each piece sized just right—even comfortable for women to enjoy in one bite. The chef’s thoughtfulness is also evident, as he kindly checks if the size of the sushi is suitable. Starting with the scallop, each piece of nigiri is carefully crafted, with attention even to the way each ingredient is sliced.

[Koto & Chiyoda Wards] Renowned Sushi Restaurants in Tokyo
Located about a 5-minute walk from Sumiyoshi Station on the Tokyo Metro, Sushi Miu is nestled in a quiet residential neighborhood.
Praised by those in the know as a hidden gem, this intimate restaurant features just seven counter seats. Guests can enjoy a tranquil atmosphere and a sense of comfort throughout their visit.

The highlight of Sushi Miu is its truly unique shari (sushi rice), unlike any other. The bold use of red vinegar gives the rice a distinctive character with very little sweetness.
Despite using the same shari for every topping, it pairs perfectly with each one. Many diners praise its addictive flavor, which also pairs exceptionally well with sake and other drinks.
Photograph:89c7887833
The menu features only one option: the Omakase Course. Guests can look forward to approximately 12 pieces of nigiri and around 5 seasonal appetizers, all selected by the chef.
A curated selection of about 15 varieties of sake and other alcoholic beverages is always available. There is no printed drink menu; instead, simply share your preferences and the staff will recommend the perfect pairing. The course is thoughtfully designed to be enjoyed alongside your choice of drinks.
伊達幸一
My personal favorite was the ikura (salmon roe). Unlike most, it is not marinated in soy sauce, giving it a beautifully clear color. The flavor is rich and the texture is unlike anything I've had before—truly impressive. For a renowned restaurant in Tokyo, the dinner price here is exceptionally reasonable.

The restaurant offers only an omakase course, allowing them to carefully select their ingredients and provide excellent value. Guests can enjoy premium selections such as fatty bluefin tuna (otoro) and extra-large botan shrimp—items typically reserved for high-end establishments.
Their tuna is sourced from Fujita Suisan, a highly regarded wholesaler with a loyal following.

The lunchtime omakase course is known for offering exceptional value. Featuring delicacies such as ark shell clam, saimaki shrimp, and medium fatty tuna, each piece is crafted to impress even the most discerning sushi connoisseurs.
Every item is meticulously prepared in the Edomae style. Reviews also praise the crisp texture and outstanding aroma of the nori seaweed used in the hand rolls and gunkan-maki.
The Marunouchi location is the only branch where you can enjoy tuna supplied by Fujita Suisan, a renowned tuna wholesaler serving Tokyo’s top sushi restaurants. The omakase course features both appetizers and nigiri. The restaurant’s signature tuna is served in three consecutive styles: akami (lean), chutoro (medium fatty), and torotaku (fatty tuna with pickled radish). Despite its thickness, the akami is exceptionally tender, perfectly balanced with the sushi rice. The chutoro is also remarkably soft and delicate.

The atmosphere was very calm and relaxing. The meal began with bonito sashimi, followed by about five small seasonal dishes, around eight pieces of sushi, a miniature ikura and uni donburi, and finished with miso soup. Every dish was truly delicious, and the sushi was of outstanding quality—especially the chutoro and shrimp, which were exceptional.
