Food We offer conger eel that has been added and boiled down, as well as seasonal ingredients procured from Toyosu.
Since our founding when we operated from a food stall, we have been serving conger eel that has been boiled down and cooked, as well as seasonal toppings purchased daily from Toyosu Market. In spring, you can enjoy halfbeak and spring sea bream, and for a la carte dishes, you can enjoy firefly squid and red bean liver. We only purchase the best quality products that day, regardless of the origin, so please enjoy the different items each day. For lunch, we also offer Sushi, egg roll, and roll sets, with refills of tsuma mori and miso soup.

The rice we use for our sushi is ``Smile no Kizuna'' from Noto, Ishikawa Prefecture, which has been improved for Sushi. The sushi rice is cooked in a hagama pot over an open flame, giving it a fluffy texture. When you squeeze it, it doesn't fall apart, and when you eat it, you can feel the outline of each grain in your mouth, yet it loosens up smoothly. Another characteristic of Edomae sushi at [Jabinoichi] is that the sushi is seasoned with only vinegar and salt, without sugar, and then with simmered ingredients.

For the evening course, we offer three traditional Edomae Sushi options: ``Matsu'', ``Bamboo'', and ``Plum''. Prices are 6,000 yen/8,000 yen/10,000 yen, and each comes with Small dish, sashimi, side dish, grilled dish, green onion tuna soup, and sweet. The number of pieces of Sushi varies depending on the course, and comes with an egg roll and a roll. The toppings and sashimi are upgraded depending on the course, and some items change daily. Please use it for entertaining important guests such as entertaining and dinner parties.
