A specialty restaurant in Sapporo serving crab cuisine

Katsu Kani no Hanasaki

Located in Sapporo’s Chuo Ward, Katsu Kani no Hanasaki offers a unique experience where, for certain courses, you can watch live king crab be expertly prepared right before your eyes. The restaurant is about a five-minute walk from Susukino Station.

In addition to crab, guests can enjoy a variety of fresh seasonal seafood. Private rooms are available, making it an excellent choice for family celebrations and special occasions.

"Taraba Crab Sashimi" is one of the highlights of the VIP course menu. The sashimi is expertly prepared right in front of you, offering a rich sweetness and a firm, satisfying texture.

Each piece is generously sized—so large that it is difficult to finish in a single bite.

The white part found on top of the red crab meat is said to be the heart. While the heart is often mixed in with the crab miso, here it can be served separately because it is firm and intact.

The heart is known for its rich, concentrated umami flavor.

A full-course Taraba crab experience
Enjoy Taraba crab served in a variety of preparations—rare, medium, grilled, and boiled—each highlighting a different flavor and texture. It’s impressive how the taste transforms with each cooking method, even though it’s the same crab. I also got to try "fundoshi" (crab eggs) for the first time—a unique delicacy with an intense crab flavor unlike anything I've had before.

This restaurant is dedicated to serving live Taraba (king crab) and live kegani (hairy crab) piping hot.

They never use frozen seafood, so you can enjoy the freshest seasonal crab at its best.

You can request to have half of a whole horsehair crab served as sashimi. The meat is sweet, rich, and firm, making it delicious even without dipping it in crab vinegar.

The remaining half is boiled and enjoyed for a different flavor experience.

The "Grilled Taraba Crab" in the "Kani Zukushi Course" is known for its sweet flavor and is so delicious you could eat it endlessly.

In addition to taraba crab, the course also features kegani (hairy crab), allowing you to fully enjoy the authentic taste of Hokkaido crab.

MadamEbisu

Guided by the proprietress, I enjoyed a luxurious whole horsehair crab—half of the legs served as sashimi, and the rest boiled. It’s rare to have an entire crab to yourself, but the sweet, rich meat was so flavorful that it hardly needed any vinegar. It was a truly indulgent experience—so delightful, I almost forgot I was here on business.

Opted for the "Crab Feast Course" at JPY 12,000. My thoughts? Outstanding! Every dish was a testament to quality and freshness—no further explanation needed. The sashimi crab was incredibly plump and flavorful. Grilled king crab and boiled crab were both exceptional. Chef, this is fantastic! Later in the meal, the addition of buttered potatoes provided a unique and creative twist. Every bite was simply delicious.

There’s nothing like enjoying fresh crab on site. I tried the crab sashimi, and was amazed by its delicate sweetness and flavor. It was truly an unforgettable dish that left a lasting impression.

The crab was expertly thawed, resulting in meat that was both plump and delicious. It was my first time trying raw crab sashimi, and I was pleasantly surprised by its unique sweetness and smooth, slightly slippery texture—somewhere between sweet shrimp and squid sashimi. The flavor was so delicate that adding too much soy sauce would easily overpower it.

Enjoy crab in every style from start to finish—fresh, grilled, shabu-shabu, gratin, and a carefully prepared crab porridge to complete your meal. It’s been a while since I’ve indulged in so much crab, and it was truly a treat! Sometimes, it’s nice to go all out with a crab feast. The grilled king crab is especially recommended for its impressive flavor and satisfying texture.

Baho

We visited as a party of two and ordered the crab shabu-shabu and horsehair crab course. The set also included fresh crab sashimi, which was incredibly sweet and delicious. Inspired by a TV show, we tried preparing the crab shabu-shabu in the same way—dipping the crab into the hot broth, watching the meat bloom like a flower as it cooked. As expected, it was warm and exceptionally tasty.

The live kegani (hair crab) from the tank is priced at JPY 4,000 for a 400g crab, which is slightly more affordable than typical tourist prices. The fact that only 400-450g crabs are stocked in the tank shows the restaurant’s dedication to serving crabs at their peak, when the meat is at its fullest. The crab is perfectly seasoned when boiled, with dense, succulent meat that is easy to extract.
