京都嵐山、桜と清らかなる水と空気の中、老舗の懐石料理「錦」さんへ。
混んでいると嫌なので、昼前に予約を入れて一番乗りに。
季節は桜の時期ではあるが、この時はまだ咲き始めたかどうか。あと少しの平日とは思えないくらいに渡月橋は人で溢れている。
まだ咲いてないのに。
11時半にお店に到着。
一番乗りのテーブルは庭の見える窓際席。
連れのゲスト様も満足なようだ。
良かった。
ランチの懐石
「嵯峨錦膳」
錦の懐石は、桜宿膳と言い2段の漆器のお重に入ったお料理。
見た目にとても美しい。
しかし、外の庭のタヌキの置物は何故たくさんのタヌキなのだろう⁉️
普通、タヌキの置物は入口なんかに置いてあり、商売繁盛の意味で「他ヌキ」、一番になるという事だが、何匹もいるので意味的にもはや何に向けての物か当事者以外は謎である。
まだ誰もいないランチ前だと思っていたら、いつの間にかほぼ満席だ。
さすがタヌキ！
早くに来て良かった。
ビールと一緒に突き出しが運ばれて来る。
丁寧な接客と声掛けに京都のおもてなしを感じる。
ここのスタイルは、桜宿膳という漆器の重箱で供される料理だが、何とも京らしい日本風情の美しさか！
コース全てにおいて、漆器と磁器の器達の綺麗な事。
貝合わせの漆器や重箱の華やかさに見惚れてしまう。
最近世界での日本伝統工芸が人気で、先日は巴里のルーブル王宮で開催された、桜と和食の日本プロモーションでも、輪島キリモト漆の重箱を採用していて、まさに「桜宿膳」の伝統を欧米に伝える機会となっていた。
素晴らしい日本工芸品の世界である。
☆先付け からし豆腐 土佐醤油
☆お造り 鯛、水玉胡瓜、桜花長芋、もろみニンニク (貝合わせの漆器が美しく過ぎる）
☆汁物 蛤、筍、蕨
☆桜宿膳 重箱入り
上段 酒肴 浅利時雨煮、帆立燻製、バイ貝旨煮
海老の雲丹和え
下段 炊合せ 豚角煮、芽葱辛子
☆蒸物 鰻飯
☆揚げ物 稚鮎揚げ、筍、ブロッコリー
☆酢の物 湯引き蛸明太和え
☆ご飯 もずく雑炊 生姜味が旨くお代わりをした
☆水物 草餅ぜんざい
全部とても美味しかった。
さすがタヌキである。
お昼の膳とは思えないくらい豪華な桜宿膳。
器と料理の饗宴。サービスも京言葉で上品で間断ない。
こういう意味のある日本料理をこれからも大切にして行きたい。
