福岡市中央区六本松・旧九州大学六本松キャンパス跡地に出来た「福岡市科学館」の北側、旧来の商店住宅密集地にあるチャンポン専門店。
以前、札幌ラーメン「一輝」があった場所です。
ずーと気になっていて、今回初訪問。
夜8時過ぎに遅めの夕食をいただきます。
扉を開けると大将の「いらっしゃい」と威勢のいい声。
お一人で切り盛りされてます。
先客は3名。
4人掛けテーブル席1つとカウンター席があります。
テーブル席は利用中だったので自動的にカウンター席に着座。
デフォルトの「博多ちゃんぽん」をお願いしました。
大将が裏に入り鍋を振るう音が聞こえ、大げさでなく「瞬時」に配膳。
あっつあつの「博多ちゃんぽん」登場です。
見た目は豚骨系ですが、魚系の出汁の香り。
大将に伺うと「あご」「鶏」「豚骨」をブレンドしたスープとのこと。
スープをいただくとあっさり系で「鶏」の旨みを一番感じます。
具は豚肉、イカ、かまぼこ、キクラゲ、キャベツ、もやし、エンドウ。
野菜たっぷり。
麺は至ってノーマルな中太ちゃんぽん麺。
硬めの茹で具合で最後までのびないタイプ。
濃厚豚骨系も好きですが、あっさり鶏・魚系スープもいいですね。
調味料として置かれているごま油に入った「焦がしニンニク」を加えると旨みが増してさらに旨い。
文字にすると至っておとなしく特徴なさげですが、滋味で奥深い一皿。
今夜の気分にぴったり来て感動的だったんですよ。
気分よく、精算時、大将とちょっと立ち話。
ずっと中華の料理人をしていて一昨年の6月に一念発起しての開店したそうです。
「年食ってるけど新米なんですよぉ」とにこやかに話される大将。
このチャンポンに対する自信と謙遜。
侍のようでかっこよかったぁ。
本当に美味しかったです。
また来ます。

I have not visited here for a long time. This time, Watakushi, Kanai, and JD visited for dinner. The owner manages everything by himself, but it is not a big joke, he is really a quick nabe sabaki! I am impressed. My "Curry Champon" appeared in a slightly larger bowl. The default "Hakata Champon" is topped with a generous amount of the restaurant's original "Keema Curry". The base is a triple broth of "grilled sardines", "chicken", and "pork bones". The ingredients are pork, squid, fish paste, kikurage mushrooms, cabbage, bean sprouts, and peas. The "keema curry" on top of the ingredients is filled with minced meat and looks like "meat miso" at first glance. It is packed with the flavor of meat. The spices are also plentiful, and the spiciness comes afterwards. The spiciness is quite spicy and warms the body. Or rather, my ears were hot and I was sweating.
