...arly particular about the delicious and famous ingredients that are unique to Fukui, such as seafood from the Sea of Japan, Echizen crab, Fukui pork, Fukui's specialty mackerel heshiko, Hana Echizen rice from Ikeda Town, grated daikon buckwheat noodles from famous Fuku Soba, etc. And we use only local sake, and we have 8 to 10 types available each season from local breweries.
