The chicken we use at our restaurant is "Hinai Jidori" from Akita Prefecture. We purchase fresh, whole, gutted chickens every day. After that, we carefully process each bird one by one after aging them in-house, identifying when they are in the best condition. ◎“Hinai Jidori” is characterized by its elastic flesh, and its aroma, fat, and flavor are overwhelming. Please enjoy the exquisite yakitori made with high-quality chicken and other special dishes as a course.
