大人の名古屋に載っていたこちらのわださんは紹介制でして、連れて行ってもらいました(^^)
同伴者が紹介制なのでメールで問い合わせたところ、1ヶ月に3組だったかな?は新規を取るそうです。
コースのお値段はわかりませんが、おまかせコースをお願いしてくれていました(^^)
先にお店に着いたのでご主人の和田さんと色々お話ししたところ、ご出身は恵那で、16年同じ親方についていたそうです。
お野菜は地元恵那の物で生産者が分るものしか使わない、ゆくゆくはお野菜全部作りたい。というなかなかのこだわりです(^o^)
お1人での切り盛りですので基本的におまかせコースのみ、メニューにアラカルトもありますが、今はほとんどやっていないそうです(コースに追加などでは対応していただけます)
さてさて同伴者が到着したのでコースがスタートしました☆
この日のおまかせメニューは
●天然帆立と毛蟹の付出し
●大蛤と筍の茶碗蒸し
●本日の肴 三河牛、河豚、恵那鶏などなど
●本日の刺身
●太刀魚の焼物
●紅瞳のど黒、恵那の野菜などなど
でした。
天然帆立と毛蟹の付出しの毛蟹は昆布森のもので、帆立は梅肉で合えてあり、なかなかの美味しさ☆
続いて大蛤と筍の茶碗蒸しが来ました~!上にあおさのりがかかっており、海苔の良い香りと筍と蛤の旨みが口いっぱいひろがります!(^^)!
本日の肴は飯蛸・白かぼちゃ・河豚のから揚げ・揚げたホタルイカにネギ味噌を乗せたもの、三河牛のうちももを焼いたものが出てきました~。
どのお料理も日本酒がススムススム~笑
お次はお刺身ですが、この日は河豚、アオリイカ、ジンメガレイ(ホシカレイ)、白魚でした。
奥からいい香りがしてきた〜と思っていたら、太刀魚がきました!
五島列島の太刀魚で120センチほどあったそうです。
脂がのっていてお口の中で溶けちゃいます(^^)
そして、最後のお料理は、紅瞳のど黒のしゃぶしゃぶです。
和田さんから、身の温度は60度ぐらいがベストで、60秒ほどしゃぶしゃぶしてね。お塩で食べるのがおススメと教えていただき、最高に美味しい食べ方でいただきました(*´∇︎`*)
この付け合わせの白菜もすごく甘くてパクパク生のままいただいてしまいました笑
お雑炊とデザートで終了です。
飲み物はワインは種類あまりないですが、日本酒いいの置いてます~(^^♪
日本酒好きな方は満足して頂けると思います(*^。^*)
