五反田駅から徒歩5分ほど。
1年ほど前にお邪魔して、記憶に深く刻まれたので、
再訪してみました。
以前より、格段に進化していて、工夫が随所に見えます。
しかも、希少な淡海地鶏が登場したり、
鶏以外のお料理も思わず笑みがこぼれるほど。
この日いただいたコースは、5800円。
ものすごいCPです。
では、内容を。
1、蒸し茄子
大葉と土佐酢のジュレ
生姜餡で。
2、揚げたハツ
青唐辛子で。
さくさくのWパンチです。
3、トリュフ茶碗蒸し
蓋を開けた途端、トリュフの香り
4、信玄鶏のかしわ(腿)
しっかりとしたテクスチュア
5、信玄鶏と淡海地鶏のつくね
これは贅沢な一品
6、ハツ元
心臓とレバーの間
くさみもなく、いい食感

・膝のげんこつ
こりこりとした軟骨独特の食感。
食べ比べが楽しい。
9、15品サラダ
焼き、揚げ、生、と多彩。
10、信玄鶏レバー
これも臭みがまったくなく、
大ぶりなカット。
まったりと舌にまとわりつく旨味。
11、淡海地鶏の上腿
淡海地鶏は皮がおいしいのですが、
分厚い皮が香ばしく焼けていて、
身もぷりっぷり。
焼いてからカットしています。
12、ポーチドエッグに
すましバターと、からすみパウダー。
それを混ぜて、トーストに乗せて。
これは、もう反則的組み合わせ。
13、とっくり(胃)
1本で4羽分使っています。
14、淡海地鶏の手羽先
といっても、球形に焼き上げられ、
手羽先の概念とは違います。
旨味をギュッと閉じ込めてあります。

・鶏出汁と、いりこのにゅう麺
・冷製アーモンド担々麺
・アメリケーヌカレーライス
ということで、アメリケーヌカレーライスを
選択。
焼き鳥屋さんに来て、カレーを絶賛するのも
どうかと思いますが、これだけ食べに、また
来たいです。
17、甘味

・桃のかき氷
・タピオカミルクティーのかき氷
・ほうじ茶と和三盆のプリン
桃のかき氷を。
フレッシュな桃だけでなく、
モスカートダスティのジュレが
かかっていて、まさにオトナの味。
お供は、
・「英雄」のソーダ割
甘酒のような味覚と風味ですが、
純米にごり酒
・赤ワイン
焼き鳥屋さんなのに、ソムリエがいて、
きちんと的確な説明もしてくれます。
この日も、ほぼ満席。
すごい進化を遂げています。
素材もさることながら、焼き方の火入れも抜群。
鶏の旨味とジューシー感を存分に楽しめます。
