さて今回利用したのは、鮨『晶』(しょう)
寿司大、大和寿司の行列には及ばないものの、豊洲市場でも人気のお店

まずは温かい土瓶蒸しから、温かいメニューでのはじまりって、胃に優しいですね

シコッとした食感が舌に心地よく、うま味と甘みがほどよい

10月〜1月が旬の小肌、皮目がしっとり、旨味が凝縮
・八海山雪室貯蔵三年(280ml)〜3000円
魚沼に古くから伝わる低温の食糧貯蔵庫 雪室、3度前後という低温が雪によって安定的に保たれた環境で3年の時を経た純米大吟醸、魚沼の自然と伝統が育んだまろやかな味わいが楽しめます

1時間と少々の滞在時間、握りのテンポも絶妙で豊洲市場らしく、お酒も楽しみながらサクッと江戸前寿司をいただく事が出来ました
それぞれのネタを活かした仕事、シャリの加減も程よく、味の方も文句なし
