京橋交差点近くのビルの地下1階に構える
おみ乃 椿。
押上の焼き鳥屋さん、おみ乃の3号店になります。
押上での立上げ後以来の訪問。
店主の小美野さん、詳細に自分の事を覚えてられていました(嬉)。
くの字の様な6席カウンターで焼く様子が丸見えのスケルトン焼き場となっている劇場型スタイル。
天井ダクトでこれは以前ここに入っていた店舗の構造を利用。
小美野さんによるとこのダクトの仕様で焼きの入りが全く違うそうです。

押上は焼き鳥をメインにしてひたすら串ものをいただくスタイル、神谷町は焼き鳥と日本料理のハイブリッド、
そしてこちらの京橋もハイブリッドですが鶏も伊達鶏、高原比内地鶏の2種で楽しめる様になっていました。
焼きに関しては押上の頃から格段に洗練。
勉強先の鳥しきで培った技術、経験を踏まえてかつ面白い事をやっていました
(つくねを焼く時ちょっとした事をやってそれを小美野さんに言うとよく見ていましたね、と嬉しそうだった)。
以前海外へ進出する話があったのですがコロナ禍で頓挫、ちょうど今の店舗が空きになったので利用されたのだそう。
ただ、3店舗目はもう一つ大きな狙いがあってそれを聞かせていただいたのですがなるほど、だからこういう店舗なのね。
お弟子さんの教育もしっかりされていてキビキビと動かれています。
ひさびさに小美野さんの焼鳥を堪能出来て良かったです。
また機会を作って伺いたいと思います。
