高級な鮨屋が多く集まる銀座と食の台所と言われる築地の中間に位置する東銀座に、一年前の2023年4月にオープンした鮨いつつ。
同じく東銀座の近隣にある南イタリアンレストラン〈ヴォメロ〉の系列店です。雰囲気は銀座らしさ漂う鮨屋の雰囲気。カウンター席のみ。
おまかせコースは、日曜日のみ更にサービスで一品増やしているとの事です。(鰆をプラス)
ガッツリと本格江戸前鮨をゆっくりと楽しめる内容でした。
コースには揚げ物、炭焼きなども含まれ、味も良く、雰囲気も良く、銀座で一万円はリーズナブルです。
満足できる夕食でした。

脂がのって美味しい。これから産卵に向けて脂を付けるシーズンだからという。
13.アオリイカ(お塩と酢橘)
若干ネバリを感じ舎利に絡み美味しい。だんだんと夏に向けてネバリが強くなり、鮨よりも刺身に向くとの事。
14.コハダ
2、3日に分けて酢を入れてるので、柔らかくジューシーに仕上がるとの事。確かにジューシー!

背中の部分。ネギと生姜をすり鉢で潰した薬味が、アクセントで美味しい。
