食べログでの投稿は初ですが実は昨年からの再訪になります。
まず断っておきますが、ここは時間の余裕のない時は行かないこと。
何故かは「三立」の言葉が示す通り、行ってみれば判ります。
初回はそれなりにインパクト大でした。福島市内でこんな旨い
蕎麦屋があったのか、それと天せいろの値段に正直驚いたものです。
「三立十割」も初めて教えて頂きました。
そばの「挽き立て」「打ち立て」「茹で立て」の意で、即ちそれだけの
時間が必要なのです。出るのが遅いと腹を立てるような輩はまず
行くべきでない生粋のそばや、夜は居酒屋さんです。当然酒にも拘ってます。
本来なら突き出しで旨い焼酎でも飲みながらゆったりと流れる刻を楽しみながら
待つべきでしょう。
今回、新そばを蕎麦人で是非とも食べたいと伺いました。例によって
待つこと20数分なので許しを得た写真が4-50枚…から厳選して載せたのですが(汗;
落ち着ける居酒屋は内装も相まってやや薄暗いです。入り口通路から厨房に面する
カウンタに数人、小上がりにも先客が一組、後で来たグループは奥の座敷へ…。
二段せいろに粗塩付きの天ぷらが相応に華麗さを演出します。
まず塩で御賞味ください…に則って、旨いです。また、何も付けずとも充分イケます。
3度目以降、つゆ、薬味投入と順立ててみましたが何かイケません。
今年の蕎麦は出来が悪いんでしょうか?
つゆも薄くて旨みが感じられません。相性が悪いのかな、
それともブレンド失敗なの? 仕方がないので最後はまた生と、塩で頂きました。
引き換え、天ぷらは変わらず美味しいです、エビの衣カラッ、肉はジューシー
のセオリー通りに仕上がってます…、塩で充分満足、でもホントは天ツユでも
食べてみたい。
最後に蕎麦湯で割ったソバツユはそれなりに出汁の香りが再現して美味しい
のでした…
蕎麦は生き物、お店の薀蓄にも色々書いてありますがやはり出来不出来が
あるのでしょう。それとも食べる人の体調も影響なのか(今日は健康ですけど…)。
福島でも十指に数えられる蕎麦人、評判を落とさぬよう頑張って欲しい
