久々に新潟で飲む。
ひとり飲みです。
どこにしようかなと迷い。行きたかったはつね寿司本店へ。
予約して訪問です。
この日は、私を含めカウンター満席だったようです。
16000円のコース。

あとは、南蛮海老の出汁。
玉子焼きでした。
どの料理もさすがというべき料理と味。
細かい手が加わっています。
ビールや白ワインが進みました。
ただシャリは、粘り気をギリギリ減らした感じの水加減。
このくらいが確かに寿司には合っているのでしょうが、最初の方のお寿司のシャリは、ちょっとかためだったかな。
後の方は、そのかたさがほどよい感じになってきた感じでした。
完全予約のお店で、すべてコース。
ちなみに1時間後に来訪したお客さんと食べ終わりはほぼ同じになる!
食べ始めの時間によってスピードは違ってきますね。
ちなみにお店のご主人は、お客さんの名前をしっかり覚えて接客していることに脱帽です。
