マイレビ様情報で蕎麦取り置き予約を入れてからの訪問です。
予約時、店主様から11時過ぎにお越しくださいとのこと、近くの池田温泉で湯治を済ませてからの訪問でしたが、この日は既に予約分だけで蕎麦売り切れ御免。
マイレビ様情報のおかげ、感謝します。
予約時、十割と二八を一枚ずつ取り置きお願いした通り、私は十割ざる蕎麦と出汁巻を其々単品で、家人は二八のセットを注文しました。
丸抜き微粉の十割蕎麦は一寸30本程度の極細切り、微粉にしては結構香ります。
丸抜きにしては色合いがやや黒みがかった茶色であることと、ガラス越しに見える蕎麦打ち作業室に石臼が見当たらないことを合わせると、自家製粉では無く製粉所から蕎麦粉を購入しているのかな?
ご店主に確認すると、オープン当初は店内で手挽きしていたそうですが、現在は千葉県成田市と三重県から蕎麦粉を購入しているとのことでした。
十割は成田産の千葉在来のみを使用、製粉所で製粉されてから時間が経過しているにも関わらず、栗に似た芳香そこそこ香ります。
千葉在来は過去に他店で食べた時と同じように粘り強い蕎麦切りで細くてもモチモチした食感。
二八は成田産千葉在来と三重県産常陸秋そばの丸抜き微粉ミックスで十割以上に細く見えます。
香りは十割に及びませんが、こちらも丸抜き微粉二八にしてそこそこ香ります。十割ほどの粘りはありませんが、小麦グルテンの弾力(コシ)が感じられ喉越しも当然、二八の方が上でした。
セットの珈琲はテーブルでセルフサーブ、予め珈琲豆の入ったフレンチプレスに電気ポットで湯を沸かし自分でお湯を足します。
2〜3分待ってからプレスして出来上がり、フレンチプレスは細かい珈琲豆の油が浮きますが、その油も香りの成分。
ブラジルベースにコロンビアとグアテマラ少々のブレンドかな?酸味弱く甘い香りとコク深さが際立つ美味しい珈琲でした。
