平日の遅いランチタイム、その後の緩い午後予定も考え合わせ、懐かしさから久々にここへ立ち寄ってみました。
遠い昔、自分が若い学生時代。今は亡き歌手・岸洋子さんが通う渋谷のお店（本店）として流行り始め、いつしか栃木県小山市やら広範にお店を展開していた印象のあった「壁の穴」。
今も相応の店舗数は保持する様子ながら、あれから早半世紀以上が経過。元祖たらこスパゲッティーと謳われている存在で、納豆スパゲッティーをポピュラー化したのも確かこちらだったかと。
そんな思い出が頭を過ぎりながら、この日注文したのは「壁の穴」往年の人気メニューと言われているたらこベースの「たらことアオリイカ、納豆のスパゲッティ」。ほぼ懐かしさのいいとこ取りメニュー。
久々の比較的もっちりしたパスタに、たらこをまぶし、イカを加え、海苔と臭みを抑えた納豆が乗る独特な味の仕立ては、昔のままで欲張りな構成。程よい味わいは、食が進みます。
ただし、月日は流れ、時代とともに広く日本グルメ界の研鑽と努力により進化して来たパスタ達。
加えて、食す側の自分含む一般顧客の舌も洗練され、今日では「元祖たらこスパゲッティー」や「納豆スパゲッティー」の「壁の穴」自体のメニューの優位性又はアドバンテージは正直見出し難くなった気もします。
厳しめながら要するに同じではなくても、それらをオマージュしたと見られるものは、これまでの半世紀、他店にても幾つも見受けられるようになり、パスタの味付けも更に美味しく感じられた他店の記憶も合わせ持ちます。
それはそれだけの話ですが、「壁の穴」の立ち位置、さて今後どうなって行くのでしょうか。
昔を知る食いしん坊の1人の正直な感想として、恐縮ながら敢えて書き記します。
この日の「たらことアオリイカ、納豆のスパゲッティ」支払額 ¥1,485（税込）也。
