This is my first visit. First I ordered the sashimi platter, and since it was aged fish, it had a lot of umami and was delicious. But the price may be a little high. The kamayaki was fatty and delicious, but Other was very disappointing. I ordered grilled squid, and I don't know when the ingredients were made, but the squid melted as soon as I put it in my mouth. Squid doesn't turn to mush unless it's very fresh, so this is bad. After taking one bite, I decided it was dangerous and didn't use chopsticks after that. Lastly, I ordered the salmon roe bowl, which is one of the most popular dishes at this restaurant, and since I was sitting at the counter, I could see exactly how it was being made. Hey, why are you pressing down on the rice in the bowl so tightly with the rice paddle? ? ? The staff is pushing the rice with a paddle with all their might (lol). And the rice bowl. First of all, I have a bite of salmon roe. ...Thick...The salmon roe is too strong...It's like some kind of cheap salmon roe sold at the supermarket, but it's all too runny and the flavor is too strong. It feels like a loosened muscle. Of course I like Sujiko, but imagine filling a bowl full of Sujiko and eating your mouthful. Isn't it too heavy? That's different. When adding a lot of salmon roe to a bowl, I find that the best flavor is to use kaeshi, which is a little less salty and has a smoother soup stock. . . It's so heavy that I can't move my chopsticks through it. . . And the rice in question. That's right. It's Sorya likely. The rice grains are completely crushed and become half mochi (lol). If I were to explain it strictly, it would be like the feeling of sticky rice in ohagi. It's like eating a bowl of ohagi with a heaping amount of muscled roe on top of sticky rice. It was a very disappointing night.
