川福では、刀を作るのと同じ製法で作られている和包丁でうどんを切ってるそうやで〜
現在、日本でうどんを切る和包丁を使いこなせる人間は僅かで、うどんを切るのには、高い技術を要するそうやで〜
和包丁と、それを使いこなせる職人の腕にしか出せない、うどんの鋭い切れ味は、研ぎ澄まされた感覚にこそ響き、なめらかに口を通る食感、半端ないつるつる感、うどん本来の味、食感、喉越しがあるそうやで〜
機械化している現代、時代と共に形を変えていく、うどん、川福には、失いたくない技術、継承したい味、技、があり、日本の文化、伝統、歴史と共に歩んでいきたいそうやで〜
