イベリコ屋さんにお伺いしました。
入り口に、豚さんが迎えてくれる。
最初は、首のねっこの下の部分で、シークレットと呼ばれる場所、200キロあるイベリコ豚の1キロしか取れない部位
スペインの人が、美味しすぎて、人に教えたくないことから、英語でシークレットと呼ぶようです。

めちゃくちゃまろやかで、とろけてしまう！
これは、贅沢‼️
骨の周りは、すごく煮込んでいるのか、一口噛むと、骨のまわりからほどけて、しまう！
最高、ワインが進む
ちなみに、イベリコ豚に合うこのワインはイベリコスというワイン
これも、赤ワインで、奥深い味で喉越しもとろけるように入っていく、それでいて、インパクト最高‼️
⭐️イベリコ豚赤い方がロース、白い方がバラのお寿司、生のように見えるのですけど、真空調理で炙ってるから、安全で美味しい

ボトルでもう一つワンランク上の
ゴールドラベルのイベリコス
また、味が濃厚なとろみで、最高‼️
⭐️締めは、イベリコ豚のしゃぶしゃぶ、口に入れた瞬間、とろけるー‼️
