This restaurant has been preserving its traditional flavors since its establishment in 1879. We use carefully selected buckwheat flour, ground with a stone mill and stored in a low-temperature warehou...se to maintain its rich aroma. Our noodles are slightly thin, boasting a firm texture and a smooth finish.
The soba dipping sauce is made with a mellow and rich broth, crafted solely from aged "kaeshi" and a selection of premium katsuobushi.
