I ordered the cold soy sauce udon. Here, you pour the soy sauce from the bottle on the table, and the recommended amount is one and a half turns around the bowl—hence the nickname "Isshu~han!!" The noodles, hand-cut right near the entrance, have just the right firmness—not too hard, not too soft—and are delicious on their own. Of all the udon I tried on this trip to Kagawa, this was where I could truly appreciate the pure flavor of the noodles themselves.

Udon is served. The noodles are beautifully presented, with a slight wave and a thinner cut that recalls the style of Gamou. The taste is exceptional. The dashi is served cold and is truly delicious, with a well-balanced blend of dried sardines and soy sauce. Compared to other shops, the white dashi and soy sauce here have a more pronounced, appealing fermented aroma. I’m glad to have discovered such a wonderful place.

In the past, all Sanuki udon noodles were hand-cut with a knife, and Jun Teuchi Udon Yoshiya continues this tradition. The noodles are cut by hand, resulting in a variety of thicknesses that add a pleasant texture to each bite.
When enjoyed as zaru udon (cold noodles served with dipping sauce), you can fully appreciate the pure, delicious flavor of the noodles themselves.

The quality is reminiscent of top-ranked restaurants in western Japan, and the noodles are exceptionally delicious. As for the broth, it truly lives up to the reputation of a top establishment in the home of Sanuki udon. The kake dashi has outstanding flavor, with a perfect balance of iriko (dried sardines) and kombu kelp.

The owner is very welcoming—when I asked to take photos, he told me to feel free to shoot anywhere I liked. The staff are all equally friendly, making the experience exceptional from the start. I enjoyed tempura made with chikuwa fish cake and squid tentacles. The udon noodles here are hand-cut with a knife, giving them a pleasantly uneven texture that adds to their appeal. The iriko (dried sardine) broth is outstanding. Having this flavorful broth first thing in the morning was the perfect way to start my udon tour.

I ordered the "cold small" portion, where the noodles are chilled after boiling to give them a firm texture. I noticed that customers who ordered hot udon were sometimes served a bit faster. The noodles had excellent flavor and a satisfying, chewy bite.

I ordered the small kamaage udon. Before the noodles arrive, you are served the dashi broth. The dashi has a rich bonito flavor, yet it is not overpowering and tastes excellent. I happened to come across this restaurant by chance. The food was incredibly delicious and truly impressive. The noodles had a firm texture with a wonderful chewy bite. I also tried the special moringa leaf tempura available only in December—it was my first time having it, and it was outstanding. I can't wait to try more items from the menu on my next visit.
