I stopped by this restaurant at Tokyo Station for lunch before a business trip, as I had been wanting to try it for some time. You can choose the size of the sushi rice and whether or not to add wasabi, and there is a wide selection of sushi, all made with red vinegar rice. The sushi rice is moderately sized, making each piece easy to eat. All of the fish is fresh with no unpleasant odor, and every topping was delicious. It was my first time trying kohada maki, and I really enjoyed it. The negitoro had a pleasant sweetness and was so good I ended up ordering more. While the prices are not inexpensive, the overall experience is highly satisfying—I would definitely like to visit again.

Although it’s hard to try everything, the chawanmushi (savory egg custard) and zangi (Hokkaido-style fried chicken) are also tempting choices and make it difficult to decide. I was seated at the very end of the counter, where I could watch the chefs preparing the sushi right in front of me, making the wait both enjoyable and engaging. We were able to get a table without waiting, which was great. The casual atmosphere made it easy to relax and enjoy our meal. The food was delicious—especially the tuna, sea urchin, and clams, which were my favorites. The yuba (tofu skin) served as an appetizer was also quite impressive—perhaps the best I've ever had.
