Stepping out at Tenma Station for the first time, I was greeted by the lively atmosphere and rows of bustling shops before entering the quiet interior of Sushi Dokoro Kaibara. Each piece of sushi, enjoyed in this comfortable setting, was delicious—from my favorite sweet shrimp to the extra serving of anago. The seasonal firefly squid was served directly by hand, adding a special touch. For the first time, I experienced my beloved mozuku seaweed served warm. The crisp flavor of Japanese sake Kariho paired perfectly with the sushi. It was a delightful evening spent with friends.

Chuo Ichiba Endo is renowned for its exceptional "tsukami-zushi," a style where lightly pressed sushi toppings are gently placed on warm rice rather than being tightly packed.

Just a one-minute walk from the East Exit of Tsuruhashi Station, SUSIGIN is renowned as a must-visit sushi destination—even if it means waiting in line.
This intimate restaurant features just a counter surrounding the chef’s workspace, creating a nostalgic atmosphere reminiscent of a classic neighborhood sushi bar.

Known for its ultra-fresh seafood and sushi with a modest amount of rice, SUSIGIN allows guests to enjoy a wide variety of toppings to their heart’s content.
Many customers order from the day’s recommended selections, and on occasion, you can even sample different parts of the squid, such as tentacles or cartilage, each prepared to highlight their unique flavors.

The grilled-shimo striped jack nigiri, known for its irresistible aroma and rich, savory fat, is so delicious you'll want to order more.
Its firm texture and deep flavor speak to the exceptional freshness and quality of the fish.
There was a wide variety of sushi toppings to choose from, so I selected several of the recommended options. Among them, the seared shima-aji (striped jack) stood out for its thick cut and rich, fatty flavor—it was truly delicious. I also appreciated being able to choose how to enjoy each piece, with options like ponzu or soy sauce. Since the sushi rice portions were modest, I was able to try many different toppings.

Here are some of the standout sushi selections I enjoyed. The grilled striped jack (shima-aji) offered a wonderfully aromatic, savory flavor, and its firm, springy texture highlighted its exceptional freshness. The raw squid cartilage (ika nankotsu) was a rare treat, served as nigiri, and its satisfying crunch was truly delightful. The fresh sea urchin (uni) was especially refined, with no bitterness from alum and a remarkably elegant, clean taste.

Sushi is not limited to being enjoyed with soy sauce—you can experience an entirely new level of flavor. The pairing of mizu-nasu (raw eggplant) and sea urchin was outstanding, and the addition of foie gras is truly worth trying. The crisp texture of the scallion sushi at the end was also memorable. Every piece of sushi was carefully prepared, resulting in a thoroughly satisfying meal.

ベーコン鼻くそついてるよ
Everything here is delicious, but my favorite is the young scallion sushi served at the end. From the first bite of tuna or sea bream to the final pieces of young scallion or foie gras, every course is truly outstanding. Even the pickled ginger is exceptional.

Omakase Sushi Course [Premium]
Every piece of sushi featured incredibly fresh and plump ingredients, which was truly impressive. The toro was especially delicious. It was my first time trying sweet shrimp, and I was amazed by its natural sweetness and exquisite flavor. The seasonal appetizers and chawanmushi were also excellent. Each dish was served at just the right pace, allowing me to enjoy my meal comfortably at my own speed.
