Tantanmen

This dish features a rich broth made from flying fish dashi, combined with sesame, peanuts, and savory meat miso for a deliciously mellow flavor. The tantanmen is creamy and not overly spicy, making it easy to enjoy. I finished every drop of the soup—I'll definitely be back.

Chuka Soba Hisago

Chuka Soba Hisago is a ramen restaurant in Nakagawa City, Fukuoka Prefecture, specializing in classic chuka soba noodles. The shop is located about a 15-minute walk from Hakata-Minami Station.

The distinctive bi-colored building makes it easy to find. Inside, you'll find counter seating, table seating, and a raised tatami area where you can stretch out and relax.

The signature "Ramen" here is a shoyu ramen with a rich tonkotsu (pork bone) broth. The soup is characteristically creamy and opaque, almost completely covering the noodles.

Toppings include generous amounts of green onions, bean sprouts, menma (bamboo shoots), and chashu (braised pork). Garlic can also be added to suit your taste.

This is the "Gekikara Pi-Pi Ramen," recommended for those who love extra-spicy dishes. You can choose your preferred level of heat, from 1 to 5.

As you can see from the vibrant color of the broth, this ramen packs a punch with plenty of chili peppers. It is also topped with kimchi, making it an irresistible choice for anyone who enjoys spicy food.

ぱぶりかーしゅちるけ

Ramen
At first glance, this looks like a classic Shoyu Ramen, but the broth reveals a subtle tonkotsu flavor as well. While I usually prefer tonkotsu ramen, I was impressed by how smoothly the two flavors are blended in this mild, well-balanced soup. The bowl is topped with bean sprouts, bamboo shoots, green onions, and two slices of chashu pork. The chashu in particular was just to my liking. On the table, you'll also find condiments such as sesame seeds and pepper to customize your ramen to taste.

ちかポン

Super Spicy Pi-Pi Ramen
You can choose your spice level from 1 to 5. I usually go for level 4 or 5, which makes the broth bright red. My sister, who joined me, said, "It doesn’t even look like food..."—but I think it’s delicious. (For most people, starting at level 2 is probably best.) Toppings include kimchi, corn, bean sprouts, bamboo shoots, and green onions.

Ramen Labo Hikari no Saki

Ramen Labo Hikari no Saki is a popular ramen restaurant located in the Ogori area. Just a five-minute walk from Ogori Station, it sits quietly in a peaceful residential neighborhood.

With plenty of table seating, the restaurant is ideal for groups. Inside, jazz music plays, creating a relaxed and inviting atmosphere.

The "Chicken Shoyu Ramen" here is made by simmering Kanzidori and Hakata Jidori chicken for hours to create a rich broth. The shoyu tare combines three types of soy sauce for added depth.

This delicious Shoyu Ramen is known for its savory chicken flavor that fills every bite. It also comes with two kinds of chashu, which is a welcome bonus.

The "Special Sio Ramen," which can be customized to your preference, is also a popular choice. Select from three types of noodles and three different finishing oils, and choose two slices of chashu from three varieties—an impressive level of customization.

With so many combinations, you can enjoy a completely different flavor each time you visit.

Chicken Shoyu Ramen
The soup is visually striking, with a vibrant combination of soy sauce and chicken oil. Taking the first sip—impressive! The rich chicken flavor comes through beautifully, enhanced by the aromatic chicken oil that fills your mouth with a delightful taste. The slightly sweet soy sauce pairs perfectly with the chicken-based broth. This is truly exceptional—a remarkably delicious bowl of ramen.

がーそー

Special Sio Ramen
A clear chicken broth is enriched with dried fish and scallops, creating a deeply flavorful soup with a pronounced salt seasoning. This pairs perfectly with medium-thick, whole wheat noodles from Menya Teiou, known for their firm texture. The bowl is topped with tender chicken chashu and chuck eye roll chashu, both cooked at low temperature, as well as a flavorful chicken meatball. Every element is delicious, making it hard to resist finishing every drop of the soup.
