高知にきたらとにかくカツオを食べたい！！
ご存知の方も多いと思いますが
カツオには旬が2回あります。
『初ガツオはエサを探して北上している最中のカツオなので、身が引き締まっていて脂は少なめ。 赤身が多いからさっぱり食べられて、ぷりぷりした食感。 戻り戻りガツオはたくさんエサを食べて産卵のために戻ってくるため、初鰹より肥えていて脂がたっぷり。』
