...using a stone mill Our craftsmen carefully knead the freshly ground buckwheat ◆◇◆◇◆◇◆◇What is Izushi Soba◆◇◆◇◆◇◆◇ Izushi Sara Soba began when the Sengoku family brought a soba craftsman with them when they moved from Shinshu. The dish soba served on a small Izushi-yaki plate is a feature of Izushi soba. Enjoy the tradition of freshly ground, freshly kneaded, and freshly boiled buckwheat, making use of the natural color and aroma of whole ground buckwheat. First, check the aroma of the soba with the first dish. Add only green onions and wasabi to the soup stock and eat. From the second dish, add egg and do not stir too much. From the third dish, add yam and do not stir too much. Eat the soba in one go. Finally, have some soba soup. It has been said since ancient times that soba is a separate stomach. It's quite a lot to eat, so let's keep piling up the plates. If you eat more than twenty plates, you will be certified as a soba connoisseur. I challenge you to stack the plates as high as one chopstick.
