《昆布〆鮮魚と長芋タルタル 大葉のグラニテ ￥2800》
明石鯛の昆布〆と角切りの長芋の上に、大葉のグラニテがかかっています。
グラニテとはフランス語で「ざらざらした」という意味、シャーベット状の氷菓。
大葉のグラニテの緑色が鮮やか、中には大葉の細切りも入っていて、香りが爽やか。
程よい弾力がありまろやかな旨味の鯛の昆布〆に、シャキシャキッとした長芋の食感の対比が楽しい♪

ハンバーグはハンバーグはフライパンで香ばしく焼いてから、網の上で焼いています。
粗挽きでしっかり肉感がありながら、ふっくらとやわらか✨
濃厚なフォアグラと芳醇なトリュフのソースで、味の輪郭がしっかり。
