BUTAICHI is a no-nonsense jiro-style ramen restaurant. If you are unfamiliar with jiro-style, imagine it like "animal style"... the focus is on volume. So the noodles are thicker. The charsiew is thick cut. There is usually a lot of bean sprouts as filler to make sure you are damn full. Their sizes are scary. "Petite" is normal size... "Mini" is 1.5x serving... "Small" is 2x serving... "Normal" is 3x serving... it's for the big eater who wants volume! The noodles are ok, the egg was good, the charsiew was meaty (chunky but not melt in your mouth)... the soup, however, was so salty that I couldn't really taste the tonkotsu broth, and the large amount of garlic and ginger didn't really make a huge impact by comparison. Come for the volume rather than the taste.
ぶた壱のボリュームは半端ない。二郎系です。悪くないが、スープが塩っぱ過ぎました。大量のニンニクや生姜が入れてもらったが、塩っぱさに勝てなかったです。めっちゃ食べれる人のジャンクラーメンかな。
