手間隙かけているのがわかる料理の数々、重層的な味の構成とコース料理として計算されてる味付けのバランス。知識と経験に裏付けされた確かな芯が1本通っている。ただ、今回一番驚かされたのはパン関係。小さなパンのクラストでは過去一薄くパリパリ。メインのアンクルートはパイではなくクロワッサン生地でこれも異次元。バターも極上の九州産で初めて。好奇心がわくレストラン。
