確かな目利きで仕入れた新鮮で上質なもつ。当店では、九州産和牛を中心に契約農場の佐賀県産と鹿児島県産の和牛を一頭買いしているため、質にバラツキがなくいつでも美味しいもつ鍋がお楽しみいただけます。スープは黒豚や食材そのものから出る出汁を活用し、九州福岡の醤油「ヤマカタ」など3種類ほどブレンドした味付けで、食材をより引き立てることを心掛けています。仕入れから調理までこだわり尽くした品を心ゆくまで。
