We use a first-class wheat flour from Australia called ASW (Australian Standard White). The balance between firmness and chewy texture is exquisite. The water is soft water that has been filtered with a high-performance special filter. We are particular about using natural salt that contains bittern. When boiled, the noodles are thoroughly gelatinized (gelatinized) to create firmness, resulting in the flavor unique to Sanuki udon, which is ``soft yet chewy.''

The basic ``Kakedashi'' uses plenty of iriko from Ibuki Island. Furthermore, the combination of Rishiri kelp and mackerel creates a deep flavor, creating a first-class product with concentrated flavor. You can also enjoy the special soup of Udon-suki course. ``Bukkake Dashi'' is a rich soup made with geso and shrimp, which is rare in other places. It goes perfectly with homemade noodles. The special light soy sauce made by Kyokane Jozo in Kagawa Prefecture enhances the taste of Kamatama udon and egg-kake rice.
