どれも火入れがほど良くて
肉身の旨さを上手く引き出している。
水郷赤鶏のレバー串は
ふわふわとスモーキーな仕上がりで、
東京軍鶏のもも肉、胸肉、すね肉の串は
ふっくら、しこしこ、ぷりっとした
各々の食感を食べ較べる喜びがあり、
水郷赤鶏の皮串は
カリカリに炙られた皮の脂に山椒が香り、
つくね串は
薄皮のカリッとした表面を噛み込むと
火傷しそうな熱々のふわりとした口当たりに行き着く。
突き抜け感は無いものの
いずれも安定感のある仕事できちんと美味しい。
焼鳥のサイドを固める一品料理も

名古屋コーチンに丹波黒鶏、天草大王、青森シャモロック‥
銘柄鶏の幟(のぼり)はためく外観に先ず惹かれる。
店内も大きなカウンター主役の落ち着いた雰囲気で
新宿界隈では貴重。
ピーク時は大変な賑わいなので
オーダーの通りやすいカウンターが特等席か(笑)
