人形町駅から少し歩いて狭い露地に入ると置屋風の風情がある割烹料理店が現れました。
店内も落ち着いた雰囲気ですが、割烹料理店というよりは老舗居酒屋的な気楽な感じなのが良い。
当日予約で時間制限付きで小さなテーブル席に入る事が出来ました。
刺身はお任せ5点盛りでお願いすると、出てきたのは唯の刺身ではなく、一つ一つ手間をかけたお造りです。
一つ一つの造りの説明は写真のキャプチャを見ていただければ分かると思いますが、それで魚の味を最大限に引き出す技が光っています。
鱧の煮こごりはカクテルグラスで提供されました。
まるでコンソメゼリーのような洒落た煮こごりの中には鱧の卵の粒々と身のふっくらした食感が合わさって美味しい。
じゅん菜の酢の物には雲丹も入っていて濃厚な旨味。
丸茄子の揚げ出しは大きな鉢の中に一口大に切り分けた茄子が綺麗に盛り付けてあり、女将さんが混ぜ合わせてくれました。
真鯛の兜蒸しをポン酢でいただいたら、〆は名物の鯖の棒鮨です。
美味しい〆鯖を贅沢に使って白昆布を被せた本格的な鯖寿司で美味しい。
これは良い店を見つけたものだと思います。
