陣馬形山から下山して初体験の高遠そばを
目的に高遠城址近くのこちらのお店へ

最寄駅はというとJR飯田線の伊那市駅だが
駅から車で2、30分くらいかかるだろう
店の向かいにある駐車場に車をとめて
席待ちリストに記名して店先で待つ
15分ほどで店内に案内されてカウンター席へ
待っている間に女房と決めていた注文は、
<高遠そば(玄挽き)・1,070円>と
<高遠そば(二八)・970円>
これをシェアして食べ比べる算段
他に<そばがき(入野谷在来)・700円>と
<海老の蕎麦粉天ぷら・2尾650円>も注文
高遠そばは、戦国時代から伝わる食べ方で
焼き味噌を辛味大根のしぼり汁に入れて
蕎麦のつけ汁にする
こちらでは、自家製のくるみ汁も添えられる
2種類のそばで高遠そばが運ばれてきた
二八と玄挽き十割の二種の手打ちそばを
食べ比べると香りについては二八が強く立ち
蕎麦の自然な甘味は、玄挽きの方に感じる
焼き味噌を辛味大根のしぼり汁に溶いて
そばを潜らせて啜れば、想像を超えて美味
自然な素材の旨みからくる滋味深さに
ほっこりとさせられる
自家製くるみ汁でも味わえば、これまた旨い
変に甘すぎない自然なくるみの風味を
香り豊かな蕎麦にまとわせて堪能
海老の蕎麦粉天ぷらをアクセントに
2種のつけ汁で2種の蕎麦を愉しめた
入野谷在来のそばがきも口に含めば、
自然な穀物の甘みが口中に膨らむ
そばがきの薬味は、味噌、塩、わさび
それぞれに蕎麦の旨さを引き立てる
酒を欲したが、車なのでグッと我慢
初体験の高遠そばに大満足し、
お勘定を済ませて退店
